Flat Bread Pizza Dough - serves 4
400g flour
1/4 tsp Sea Salt
1 tsp Quick Yeast
1 tsp Sugar
2 Tbsp Olive Oil
350 ml Luke warm water
Filling Ingredients
150g Minced beef or Lamb
1 Onion finely chopped
2 Cloves of garlic
1 tsp Tumeric
1 tsp Smoked paprika
1 Small packet parsley (roughly chopped)
2 TBSP GP Spices 10 Spice Mix Hararat
1 Tsp tomato Puree
Splash of water
1 Lemon, juice and zest
A handful of dill
Salt
Half a tub of hummus
Oil Spray
Method
Prehead oven to 200 degrees Celsius (180 fan). Add the flour and salt to a large bowl- mix well. Mix the yeast, sugar, olive oil, with the luke warm water and leave for a minute or so. Create a hole in the middle of the flour and gradually add the liquid until you have a dough.
Lightly flour a clean work surface. Transfer the dough to a work surface and Knead until smooth, around eight minutes, add more flour if the dough is too sticky. Then roll into a small ball and place into a greased bowl cover the bowl and allow to prove.
Leave the dough in a warm dry place for 30 minutes or until it has doubled in size.
Now you can start on your filling, heat a frying pan over a medium to high heat. Spray some oil covering the bottom of the pan and start off by frying your onion and garlic, after a few minutes add in your mince meat of choice and all the spices mentioned above (10 Spice Mix - Hararat) Allow to cook until the meat is cooked and coloured, add a splash of water and the tomato puree and allow to simmer for five minutes.
Now taking your dough, roll the outer edge and tuck inward, creating a well in the middle to enable you to place your filling. However bake your dough before you fill the dough. Bake the dough boat in the oven for 15 minutes on a sheet of grease-proof paper.
To make the yoghurt dressing
Mix all the ingredients mentioned in the ingredients list above and add the seasoning.
To assemble:
Remove your dough boat from the oven then fill with hummus, yoghurt, packing it into the well that you created earlier. Sprinkle some cheese and pop it back into the oven allowing the cheese topping to melt.
Serving Suggestion:
Serve with fresh lettuce, wedges and garnish with pomegranate. Enjoy !
